About Forager Henry Ashby
Foraging is becoming more and more popular in Wales and we are excited to have teamed up with the Grandfather of Foragers, Henry Ashby. Henry has been foraging for over 50 years and was taught by his grandfathers in Yorkshire. “Big Granddad” taught him all about foraging along the rivers and about mushrooms. “Little Grandad” taught him all about foraging along the hedgerows. Henry also spent some time in the Scilly isles, where he spent his time shrimping and collecting seaweeds, cockles and sea spinach. There isn’t much that Henry does not know about wild food in Britain! Henry supplies some of the finest restaurants in Wales with foraged foods, including James Sommerin in Pennarth, The Gallery in Barry and Llansantfraed Court Hotel and Restaurant in Monmouthshire.
